Definition

Oak ageing is maturing wine in oak barrels. It adds aromas of vanilla, toast, and spice, a smoother texture, and a little tannin. Newer barrels give stronger flavours; older barrels add less.

Why it matters for WSET

Oak is a common source of secondary aromas in the WSET tasting method and a clue to a wine’s style and price.

Example

An oak-aged Chardonnay often shows vanilla and buttery notes.
